What's Cookin' - Feb 10-17

Last week, I wound up doing a lot of re-arranging of when we were going to eat what - I know from past experience that if I didn't have a plan (no matter how far I roamed away from that plan), we'd have wound up eating cold, stale cereal out of a box half  the week (and we don't eat cereal at all anymore, so this would be a problem!).

In spite of a somewhat crazy week, I think we ate very well!  Our meals are all gluten/grain free, using locally sourced grass-fed/pastured/free-range meat, eggs and dairy.  We don't use many processed foods - with a few exceptions, like canned organic tomatoes.  If you want to eat healthy AND tasty, you should find something here that suits your preferences.

Here are the recipes from last week's meal plan I managed to write up:

This week's meal plan - I'm striving for not entirely ambitious, here, as there is one night where I'm out for a meeting, and we plan to eat out on Friday for a slightly belated Valentine's Day:

Sunday, Feb 10
Eat out (we had a poker game that went looong - decided to grab dinner at Uno's instead of coming home late to cook)

Monday, Feb 11
Taco Salad

Also: make Ghee

Tuesday, Feb 12
Grain-Free Pancakes
Bacon
Baked Apples and Pears

Wednesday, Feb 13

Roast Chicken
Asparagus
Sliced avocado and tomatoes

Thursday, Feb 14 - VALENTINE'S DAY
(meeting tonight, so eating early or late - who holds a meeting on Valentine's Day?? My UU congregation's board, that's who.)
Chicken Pot Pie (from leftover chicken)
Riced Cauliflower

Leftover chicken
Roasted Cauliflower and Sweet Potatoes

Paleo Cookies

Friday, Feb 15
